Is Your Commercial Kitchen Ready for the Busiest Month of the Year?

November pushes commercial kitchens to their limits. Between Thanksgiving prep, catering orders, and holiday bookings picking up fast, equipment runs longer, harder, and with very little margin for error. At the same time, teams are stretched thin, which means small issues are easier to miss until they become bigger problems.

This is where a little preparation goes a long way.

Before the rush hits, it’s worth taking a close look at the equipment you rely on most:

  • Ovens: Make sure they’re heating evenly and reaching the right temperatures. Inconsistent heat can slow down production and impact food quality when timing matters most.
  • Fryers: Check recovery time and oil condition. If a fryer can’t keep up during peak hours, it quickly becomes a bottleneck.
  • Refrigeration (walk-ins, reach-ins, undercounter): Confirm units are holding steady temperatures and staying consistent. A struggling cooler during a high-volume week can lead to serious product loss.
  • Dishwashers: Verify they’re cycling properly and keeping up with demand. Slow or inconsistent cleaning can back up your entire operation.

We often see the same pattern this time of year. Equipment that seemed “fine” in October starts to struggle once demand spikes. The added workload exposes wear, inefficiencies, and small issues that didn’t show up under normal conditions.

Taking a little time now to test and inspect your equipment can prevent major headaches later. Because once November is in full swing, there’s no good time for a breakdown.
